Healthy and Tasty Indian style Broccoli fried rice

Mains Preparation time: 10 Minutes / Cooking time: 15 minutes Vegetarian

Ingredients
( Serves: 2 to 3 people )

  • Broccoli 1/2 cup
  • Finely chopped garlic 4
  • Finely chopped ginger 1 inch
  • Finely chopped green chili 2
  • Roughly chopped carrot 1/2 cup
  • White part of spring onion 1/2 cup
  • Green spring onion 1/2 cup
  • Garam masala 1/2 Tsp
  • Coriander Powder 1 Tsp
  • Lemon 1/2
  • Salt 1 Tbsp
  • Star anise 1
  • Bay leaf 1
  • Cinnamon 1
  • Cloves 3
  • Clarified butter 2 Tsp
  • Oil 2 Tbsp

How to make

First, we will boil the rice :
Keep a big pan with water to boil, add salt 1/2 Tsp, add star anise 1, Bay leaf 1, Cinnamon 1, Cloves 3.These masala makes flavourful and gives nice aroma to rice.
And add clarified butter 1 Tsp, Rice will not become sticky if we add clarified butter

Once water starts boiling, add basmati rice and mix well

Boil the rice for 10 mins or until rice is cooked to 70%
Check rice grain, if it breaks after 10 mins means rice is cooked

Now strain the water and allow rice to cool down
Take off the khade masala

Keep pan on low flame.
Add clarified butter 1 Tsp, add broccoli florets and sauté well for 30 seconds Now keep them aside

To prepare fried rice:
Now in same pan add Oil 2 Tsp, add clarified butter 1 Tsp, add finely chopped garlic, add finely chopped ginger, add finely chopped green chili and sauté well

Add finely chopped white part of spring onion and saute well

Add roughly chopped Carrot and Saute well

Add chopped spring onions and sauté veggies on high flame for about 1 minute Add salt 1/2 Tsp and mix well

Add cooked basmati rice, add garam masala, add coriander powder

Add sautéed broccoli and mix gently by lift up and drop method so that rice grains should not break

Season with lemon juice
Serve with your choice of sauce or ketchup
