Creamy Peri-peri Broccoli Rice Bowl - Atithi Sarwade

Ingredients
( Serves: 2 to 3 people )
Crispy Smashed Broccoli
- Broccoli 300gm
- Olive Oil 2 Tsp
- Salt as per taste
- Peri-Peri Masala 1 Tsp
Herb Rice
- Olive Oil 1 Tsp
- Butter 1 Tbsp
- Minced Garlic 1 Tbsp
- Mixed Herbs 1 Tsp
- Chilli Flakes 1 Tsp
- Boiled Rice 2 Cups
- Salt as per taste
- Some coriander leaves
Creamy Peri-Peri Sauce
- Butter 1 Tbsp
- Chilli Flakes 1 Tsp
- Wheat Flour 1 Tsp
- Milk 1 Cup
- Fresh Cream 1/2 Cup
- Salt as per taste
- Peri-peri Masala 1 Tbsp
- Some Coriander leaves
How to make

Chop the broccoli and boil it for 2-3 minutes with some salt. Drain and transfer it to a plate. Once cooled, flatten it.

In a pan, heat some olive oil and pan-fry the broccoli on both sides until crispy and golden brown. Sprinkle some salt and peri-peri masala, and set it aside.

To make herb rice, heat some oil and butter in a pan. Add minced garlic, mixed herbs, chilli flakes, and sauté for 2 minutes. Then, add boiled rice, salt, and coriander leaves. Toss well and cook for 3-4 minutes.

To make peri-peri sauce, melt butter in a pan over low heat. Add chilli flakes and wheat flour, and cook for 1-2 minutes. Then, add milk, fresh cream, salt, peri-peri masala, and coriander leaves. Stir well and cook for 2-3 minutes.

Assemble the dish and enjoy!
