- Fine semolina (barik rava) – 200 Gm
- Plain flour / maida – 2 Tbsp
- Puréed broccoli – 100 G

- A pinch of baking soda (to retain color)
- A little boiling water (for blending)

- Salted boiling water
- Reserved pasta water – 1/3 Cup

For the Sage Butter Sauce
- Butter – 2 Tbsp
- Fresh sage leaves – 5–6
- Chilli flakes – to taste
- Lemon zest – 1/4 Tsp
- Cheese – 2 Tbsp
- Blanched broccoli florets
- Fresh lemon juice – 1 Tsp
How to make
Make the purée: Boil broccoli florets with a pinch of baking soda until soft. Blend with a little boiling water until smooth.
Prepare the dough: Mix semolina and plain flour. Add broccoli purée and knead into a smooth dough. Cover with cling wrap and rest for 30 minutes.
Shape the pasta: Roll dough into a 1-inch thick sheet and cut into long noodles.
Cook: Boil pasta in salted water for 2 minutes. Reserve 1/3 cup pasta water before draining.
Make the sauce: Heat butter on low, add sage leaves and infuse. Add chilli flakes, pasta water, and lemon zest. Simmer gently. Stir in cheese until smooth.
Toss in cooked pasta and blanched broccoli. Finish with fresh lemon juice and serve.
