Broccoli Koshimbiri – Ganesh Shedge

Healthy Broccoli Stir-fry Salad

Ingredients

  • Broccoli, cut into florets 1

Salad

  • Chopped Carrot 1/2 Cup
  • Chopped Cucumber 1/2 Cup
  • Roasted & Crushed Peanut 1/4 Cup
  • Freshly Grated Coconut 1/4 Cup
  • Chopped Green Chillies 2
  • Chopped Coriander Leaves 1 Tbsp
  • Salt to taste

Tadka

  • Oil 1 Tbsp
  • Cumin 1/2 Tsp
  • Hing 1/8 Tsp

How to make

Blanch the broccoli in boiling water, then transfer it to ice-cold water. Drain and keep aside.

Heat oil in a pan, add the broccoli, white sesame seeds, and salt. Sauté for 2 minutes.

Transfer the sautéed broccoli to a mixing bowl. Add the carrot, cucumber, peanuts, coconut, green chillies, coriander leaves, and salt. Mix well.

For the tempering, heat oil in a pan, add cumin and hing, and pour it over the salad. Mix well.

Serve immediately and enjoy.
