Broccoli Oats Appe – Preetha Athrey

Ingredients
- Oats (powdered) – 1½ Cups
- Suji (semolina) – 1 Cup
- Broccoli, finely chopped – 2 Cups
- Mixed vegetables (onions, carrots, capsicum), finely chopped – 1 Cup
- Ginger, grated – 1 Inch
- Green chillies, finely chopped – 2
- Curd – ½ Cup
- Mixed herbs – to taste
- Chilli flakes – to taste
- Salt – to taste
- Black pepper – to taste
- Water – as needed for the batter
- Eno / fruit salt (optional) – ½ Tsp
- Oil – for greasing
How to make
Finely chop the broccoli and all the other vegetables. Keep aside.
In a large bowl, add powdered oats, suji, chopped vegetables, grated ginger, and broccoli.
Add mixed herbs, green chillies, chilli flakes, salt, pepper, curd, and water.
Mix well to form a thick, flowing batter.
Allow the batter to rest for 5 minutes.
Just before cooking, add fruit salt (Eno) with a little water and gently mix.
Heat an appe pan and grease it lightly with oil.
Pour batter into each cavity, cover, and cook on a low flame till golden and crisp.
Flip and cook the other side until evenly cooked.
Serve hot with spicy tomato peanut chutney or green chutney for a delicious, wholesome meal.
