Broccoli & Corn Tikki – Abhinay Gupta

Ingredients
- Broccoli, cut into small florets – 250 g
- Boiled sweet corn – 1 Cup
- Oil – 2 Tbsp
- Ginger (finely chopped or paste) – 1 Tsp
- Cumin seeds – 1 Tbsp
- Ajwain – 1 Tbsp
- Red chilli powder – 1 Tbsp
- Salt – to taste
- Grated Paneer – 1 Cup
- Roasted Besan (for binding) – 2 Tbsp
- Oil – for shallow frying
How to make
Add the broccoli florets and boiled sweet corn to a chopper and chop them finely.
In a bowl, combine all-purpose flour, cornflour, spices, and curdled milk.
Heat oil in a pan. Add cumin seeds, ajwain, and ginger, and sauté until fragrant.
Add the chopped broccoli–corn mixture and sauté for 2–3 minutes.
Add red chilli powder and salt. Cook until all the moisture evaporates and the mixture becomes slightly dry.
Add grated paneer and roasted besan, and mix well to form a firm, dough-like mixture.
Divide the mixture into equal portions and shape them into tikkis.
Heat oil in a pan and shallow-fry the tikkis over medium flame until golden and crispy on both sides.
