Triple Broccoli Temptation - Karuna Yelawi (Second Runner-Up)
Ingredients
For Batter
A. Broccoli Cilantro & Lime Hummus
- Broccoli – ½ Cup
- Garlic – 2 cloves
- Olive oil – ¼ Cup
- Boiled chickpeas – ½ Cup
- Tahini (sesame paste) – 2 Tbsp
- Fresh coriander leaves – ¼ Cup
- Green chili – 1
- Turmeric – a pinch
- Salt – 1 Tsp (or to taste)
- Coriander powder – ½ Tsp
- Lemon juice – 1 Tbsp
- Water – ¼ Cup (as required)
B. Cheesy Chickpeas Broccoli Bites
- Broccoli – 1 Cup
- Grated carrot – ¼ Cup
- Finely chopped onion – ½ Cup
- Corn – ½ Cup
- Ginger paste – 1 Tbsp
- Garlic paste – 1 Tbsp
- Boiled chickpeas – ½ Cup
- Green chili – 1 (finely chopped)
- Fresh coriander leaves – ¼ Cup
- Cumin seeds – 1 Tsp
- Rice flour – 3 Tbsp
- Salt – 1 Tsp
- Mixed herbs – 1 Tsp
- Coriander powder – 1 Tsp
- Black pepper – a pinch
- Chaat masala – 1 Tsp
- Olive oil – 1 Tbsp
- Bread crumbs – ½ Cup
- Cheese cubes – 2
C. Broccoli Salad
- Broccoli – 1 Cup
- Corn – ½ Cup
- Grated carrot – ½ Cup
- Olive oil – 1 Tsp
- Salt – to taste
- Black pepper – to taste
How to make
A. Broccoli Cilantro & Lime Hummus
Blanch broccoli in hot water for about 2 minutes and drain.
Sauté broccoli and garlic in olive oil for 2–3 minutes.
In a mixer jar, add chickpeas, tahini, coriander leaves, green chili, turmeric, salt and coriander powder.
Add the sautéed broccoli mixture along with lemon juice and water.
Blend until smooth, adding more olive oil if required.
Serve as a dip with bread, crackers or tikkies.
B. Cheesy Chickpeas Broccoli Bites
Blanch broccoli for about 2 minutes and chop finely.
Heat olive oil in a pan and sauté cumin seeds, onion, carrot, corn and ginger-garlic paste for 2–3 minutes.
Add boiled chickpeas and pulse the mixture in a blender to a coarse texture.
Transfer to a bowl and mix in chopped broccoli, green chili, coriander leaves, rice flour, bread crumbs and all spices.
Mix well to form a soft dough-like mixture.
Shape into small balls and place a small piece of cheese cube in the center.
Shallow fry in a pan with a little oil until golden brown and crispy.
C. Broccoli Salad
Blanch broccoli for 2 minutes and drain.
Heat a little olive oil in a pan and sauté broccoli, corn and grated carrot for 2–3 minutes.
Season with salt and black pepper and mix well.
Serve warm as a light salad.
Serve the broccoli hummus, cheesy broccoli bites and warm broccoli salad together as a wholesome broccoli snack platter.
